mulled wine spices

ingredients assembled...made a thick syrup first with lemon peel, clementine peel and juice, cinnamon stick, cloves, sugar, bay leaves and enough red wine to just cover. then add the whole bittke if wine and simmer gently to infuse the flavours-enjoy....

seasonal roast chicken option

made a seasonal variation on my favourite roast chicken recipe tonight......fresh clementines squeezed on the skin and put inside the chicken with whole garlic cloves, red onion and rosemary (of course salt and black pepper on the skin too). Cook for at least an hour in a lidded roasting pan to seal in the moisture then roast off for the last half an hour for a crispy skin as delicious contrast to the moist chicken inside.......try it, you might like it......

Seasonal edibles...... love those spiced ginger and pepper biscuits with the icing coating-they are becoming more popular with the increase in German christmas food markets in this country; stollen has to be included in the list-the combination of the grainy marzipan and soft fruity bread is just lovely.....
