seasonal roast chicken option

made a seasonal variation on my favourite roast chicken recipe tonight......fresh clementines squeezed on the skin and put inside the chicken with whole garlic cloves, red onion and rosemary (of course salt and black pepper on the skin too). Cook for at least an hour in a lidded roasting pan to seal in the moisture then roast off for the last half an hour for a crispy skin as delicious contrast to the moist chicken inside.......try it, you might like it......
